I love stir fry! What a great way to get in a bunch of veggies. Here is a great mix and match recipe:
Ginger Stir Fry
Ingredients:
1lb chicken breasts, shrimp, lean steak (or no meat if you want it to be vegetarian or a veggie side dish), cut into slices/chunks
Zucchini, sliced
Peppers, sliced
Carrots, sliced
Onions, sliced
(Any other veggies you want - if you do spinach cook it at the very end)
Olive oil
Stir fry sauce (with the soy sauce in the grocery store)
Ground ginger (you can use fresh if you want)
Directions:
Prep all your veggies.
Cook them in a pan with olive oil until pretty much done.
Remove them.
Add a little more olive oil if needed.
Add meat.
Cook until done.
Add sauce and ginger to taste and stir.
Add veggies.
Stir and cook until done.

Soy Lemon Tilapia
Soy Lemon Tilapia
Ingredients:
1 lb tilapia
Lemon juice
Soy sauce
Olive oil
Directions:
Marinate tilapia in a bunch of soy sauce and lemon juice.
Cook in olive oil (let marinade cook the tilapia - it will sort of boil).
Pour off marinade and cook a little more.

Fish 'n Chips
Ingredients for Chips:
5 baking potatoes
Olive oil
Salt
Pepper
Directions for Chips:
Peel the potatoes - I peel them on a paper towel so that I can toss the peelings faster ;)
Cut them into similar sized strips

Cut them into similar sized stripsBake at 400 degrees for 1 hour (tossing occasionally).
1 lb tilapia (or some other type of white fish), cut into 3-in pieces
1 egg
Bread crumbs
Salt
Pepper
Olive oil
While the pan is heating up, set up the tilapia pieces, beaten egg (in a small bowl), and bread crumbs, salt, and pepper on a small plate.
