I love stir fry! What a great way to get in a bunch of veggies. Here is a great mix and match recipe:
Ginger Stir Fry
Ingredients:
1lb chicken breasts, shrimp, lean steak (or no meat if you want it to be vegetarian or a veggie side dish), cut into slices/chunks
Zucchini, sliced
Peppers, sliced
Carrots, sliced
Onions, sliced
(Any other veggies you want - if you do spinach cook it at the very end)
Olive oil
Stir fry sauce (with the soy sauce in the grocery store)
Ground ginger (you can use fresh if you want)
Directions:
Prep all your veggies.
Cook them in a pan with olive oil until pretty much done.
Remove them.
Add a little more olive oil if needed.
Add meat.
Cook until done.
Add sauce and ginger to taste and stir.
Add veggies.
Stir and cook until done.

Sweet Potato Casserole
Sweet Potato Casserole
Mix Together:
3 cups sweet potatoes (if you do canned do a big can and drain off syrup 1st)
1/3 cup butter, softened
2 eggs
1 cup sugar
½ cup milk
½ tsp cinnamon
1 tsp vanilla
Put in Pan
Mix Together:
1 cup brown sugar
1/3 cup flour
1/3 cup butter, melted
Sprinkle on top
Bake at 375 degrees for 25 minutes.
Add mini marshmallows.
Bake until brown.

Ginger Soy Fried Couscous
Ginger Soy Fried Couscous
Ingredients:
2 cups cooked whole wheat couscous
3 eggs, beaten
4 tsp olive oil (or sesame oil)
Fresh or ground ginger
2 cloves garlic, minced
A few baby carrots, chopped
Some onion, chopped
1 Tbsp brown sugar
4 Tbsp soy sauce
Directions:
Heat pan with some of the oil.
Cook eggs until scrambled and cooked throughout.
Set aside.
Clear out pan.
Add some more oil.
Cook garlic, ginger, onions, and carrots a few minutes until sauteed.
Add the couscous and stir to combine.
Cook a few minutes.
Mix soy sauce and brown sugar.
Add to couscous and stir to combine.
Add eggs and stir to combine.
(I used a chopper to make the eggs really diced up).
YUMMY! If you are on WW, the POINTS are 3 for 1/2 cup and 6 for whole cup.

Ingredients:
1 cup rice
2 cups water
1 Tbsp butter
Spray crock pot with cooking spray.
Put ingredients in the crock pot.
Cook on high 2 hours.
Put on warm for the rest of the time until ready to eat.

Glazed Carrots
I love glazed carrots, especially the kind you get at Cracker Barrel. I have tried various ways and it just never tastes right. I looked up another recipe tonight and tried it and it was tasty. I thought I would share it with you guys.
Glazed Carrots
Ingredients:
1lb baby carrots
Water
2-3 Tbsp butter
1/3 cup brown sugar
Directions:
Put carrots in pot and cover with water.
Bring to a boil and cook until tender (roughly 1 hour).
Pour off most of the water - just leave a little in the bottom of the pot.
Add butter and brown sugar and stir until melted.
Let sit so the flavors absorb into the carrots.

Yummy Green Beans Recipe
My sister gave me this recipe and canned green beans have never been the same to me. It's simple, but it makes a huge difference in your green beans.
Ingredients:
Canned green beans (as many as you need to feed your crew)
Olive oil
Salt & pepper
Mrs. Dash Original
Directions:
Put your green beans in a pot.
Add some olive oil, the salt and pepper, and Mrs. Dash.
Cook on high for 30 minutes (or until soft).
They are sooooo good!

1 tsp cornstarch
2 tsp butter, crumbled
1/2 cup brown sugar
1/4 tsp cinnamon

Preheat oven to 400 degrees.
Peel, core, and chunk (or slice apples).
Lay in dish.
Combine water, flour, cornstarch, and butter and whisk until well mixed.
