I know a lot of people love instant pancake and waffle mix but I have always found it to be too tough. I decided to search the internet for a good recipe. I tried this one and it is a hit. It makes the fluffiest pancakes. It's really easy and for waffles you just add an extra tablespoon of oil.
Pancakes and Waffles
Ingredients:
1 egg
1 1/4 cup milk
3 Tbsp oil (4 Tbsp for waffles)
1 1/2 cup flour
3 1/2 tsp baking powder
1/2 tsp salt
1 Tbsp sugar
Directions:
In a bigger bowl whisk egg, milk, and oil.
In another bowl whisk flour, baking powder, salt, and sugar.
Add dry ingredients to wet ingredients.
Mix until combined (don't overmix).
Pancake Cooking Directions:
Heat griddle to 350.
Spray cooking spray.
Using a 1/4 cup measuring cup, pour onto griddle.
Cook on one side until it bubbles.
Flip and cook until done.
Waffle Cooking Directions:
Heat waffle iron.
Spray cooking spray.
Using 1/3 cup measuring cup, pour onto iron.
Cook until done.

Do you think you could make this the night before and leave in the fridge?
